Stir Fry Spicy Lotus Root

This spicy lotus stem / root dish is really simple to make but it is so healthy. Lotus roots have a crunchy texture and sweet tangy taste. It make a great dry curry dish. It boost digestion, regulates blood pressure, it is good for the skin and hair. It can be paired with any Indian bread.

Ingredients:

Serves 2-4

  • 1½ -2 cups lotus roots
  • 2 dry red chilies or ½ tsp chili powder
  • ½ tsp whole cumin seeds
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • 1 tsp turmeric
  • 4 tbsp vegetable oil
  • salt to taste

How to make Lotus Root:

  1. Cut lotus roots or use frozen already cut.
  2. Heat the vegetable oil in a thick bottomed pan.
  3. Add cumin seeds and fry for 2-3 minutes.
  4. Add the lotus roots.
  5. Add red chilies, coriander powder, cumin powder. Add salt to taste. Fry for about 10 minutes or until the lotus root is soft and golden brown in color.
  6. Serve hot with roti.
