Aloo Gobi is probably the most common vegetable curry in India. The two humble ingredients - cauliflower and potatoes cooked with onions, tomatoes and spices make the testiest vegetarian dish you can think of.
Ingredients:
Serves 4-6
1 small cauliflower,
2 potatoes
2 onions sliced
1 tsp whole cumin
1 tsp coriander powder
4 dried red chilies
3 tbsp garlic-ginger paste
1 tsp chili powder
salt to taste
black pepper to taste (optional)
1 tsp turmeric
2 fresh green chilies (optional)
2 tbsp chopped cilantro to garnish
¼ cup vegetable oil / olive oil
1 cup of water
How to make Cauliflower with Potatoes (Gobi Aloo):
Heat the oil in a large, heavy pot.
Add cumin seeds. Fry it for about 30 seconds.
Add chopped onion and cook until they're soft and translucent, about 5 minutes.
Add the garlic-ginger paste and saute until fragrant, about 1 minute.
Add the cauliflower. Then add turmeric and coriander powder. Season with salt and pepper (optional) and sauté for 5 more minutes.
Add chopped tomato and cook for additional 20 minutes. When the cauliflower starts sticking to the pan you can add few tablespoons of water.
Serve hot.
