Mixed Vegetable Curry

A vegetable curry is one of the best ways to make eating your veggies taste incredible. This main vegetarian course dish contains carrots, potatoes, green beans and peas.

Ingredients:

Serves 4

  • 1 lb diced/chopped mixed vegetables) - carrot, potato, beans, peas)
  • 2 onion
  • 4 tbsp oil
  • 4 dried red chilies
  • 1 tsp coriander seeds
  • 1 bay leaf
  • 2 cloves
  • 8 pepper corns
  • 1 inch (2.5 cm( cinnamon stick)
  • ½ tsp cumin seeds
  • ¼ tsp turmeric
  • pinch of asafetodita (optional)
  • salt to taste
  • 1 tsp lemon juice (optioal)
  • 2.5 cups of water

How to make Vegetable Curry:

  1. Chop 1 onion finely.
  2. Put 1 tbsp of oil into non-stick pan. Add red chilies and coriander seeds. After 1 minutw add the clovws, peppercorns and cinnamon and stir for 2 minutes.
  3. Slice the onion and put into the grinder. Add the roasted spices and ½ cup of water. Blend till all ingredients turn into smooth paste.
  4. Heat the oil in the pan. Add the cumin seeds, bay leaf, asafoetida and turmeric. Add chopped onion and stry fry for about 5 minutes on medium heat till onion turns golden brown.
  5. Add the spice mix paste and fry for few minutes.
  6. Now add the vegetables in order of theri cooking time. Start with carrots, potato, after 5 minuts add cauliflower, and beans. Cook for few minutes.
  7. Pour 2.5 cups of water. Add salt. Cook for 5-10 minutes on medium heat or till all vegetables are soft. Add green peas. Cook uncoverred for extra few minutes. Add the lime juice and adjust salt. You can add some water if the curry is to thick. Serve with hot rice.
