Mango & Black Beans Salsa

Sweetened with chunks of fresh mango, this salsa has a refreshing burst of tropical flavor. With the addition of black beans, this medium heat salsa is packed with protein. A wonderful accompaniment to savory dishes, Indian breads and appetizers, and of course chips.

Serves 2

  • 1 mango (not overriped) cut into small cubes
  • 1 15oz can black beans (rinsed and dried)
  • 1 jalapeño pepper (finnely chopped)
  • ½ small red onion (finely chopped)
  • 1-2 tbsp lemon juice
  • ¼ tsp salt (or to taste)
  • ¼ tsp black pepper
  • 1 garlic clove, minced
  • ¼ cumin powder
  • 2 tbsp cilantro, chopped

Mango & Black Beans Salsa:

  1. Place all ingredients in a large serving bowl and mix it gently.
  2. Sprinkle cumin powder on the top.
