Lemon Urad Dal

This is fast and easy to make a bit tangy and spicy dish flavored with few spices and lemon juice.

Ingredients:

Serves 2-4

  • 1 cup urad dal
  • 2 tbsp gingerroot finely chopped
  • 3 garlic cloves finely chopped
  • 1 tsp red chili powder
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 3 green chilies
  • salt to taste
  • 2 cups of water
  • 1 tsp salt
  • 4 tbsp lemon juice
  • 3 green chilies, chopped
  • 4 tbsp chopped fresh cilantro leaves
  • slices of lemon to garnish
  • 3 tbsp vegetable oil

Baghaar:

  • 4 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 4 whole garlic cloves
  • 3 red dried chilies
  • 1 tsp cumin seeds
  • 1 tsp coriander powder

How to make Lemon Dal:

  1. Wash and soak urad dal for 3-4 hours.
  2. Add dal, the ginger, garlic, chili powder and turmeric to the pot. Pour in 2 cups of water. Boil over medium, heat with the lid covered the pot. Cook for 15-20 minutes, until the dal is soft.
  3. Add the salt, lemon juice and some more water if needed.

Baghaar:

  1. Heat the oil in a pan.
  2. Add chopped onion and stir fry for 3 minutes
  3. Add the garlic, red chilies, onion, cumin seeds and cook for 4 minutes or until onion turns golden brown.
  4. Add coriander powder and cumin. Turn of the heat, let cool slightly, then pour the baghaar over the dal.
  5. If the dal is too runny, cook, uncovered. over the medium heat for few minutes.
  6. Add the green chilies.
  7. Garnish with fresh coriander leaves.
