Spinach Cheera Toran (Spinach with Coconut)

This spinach dish it is easy to make, healthy, light and delicious! Green and red spinach (leaves and stems) are finely chopped, then sautéed with coconut and twist of Indian spices. Cheera Toran dish is usually eaten with rice and curry.

Ingredients:

Serves 2 - 4

  • 500 g/ 1lb fresh spinach
  • 1 onion finely chopped
  • 2 garlic cloves, finely chopped
  • ¼ tsp turmeric
  • ¼ tsp cumin seeds
  • 1 - 2 curry leaves
  • 2 green chilies, finely chopped
  • 2 medium tomatoes
  • 3 tbsp oil
  • ½ cup grated fresh or desiccated coconut
  • salt to taste

How to Spinach Toran:

  1. Wash the spinach, discard any discolored leaves and tough stalks, and shake dry. Chop as finely as possible and leave in colander to drain.
  2. Heat the oil in a pan. Add cumin seeds, curry leaves. Fry stirring it for 30 seconds.
  3. Add green chiliies and chopped onion and fry until the onion is transparent.
  4. Add chopped spinach and tomatoes, cover tightly and cook on a low heat for 4 minutes.
  5. Stir in the coconut and add salt to taste. Cook for 2-3 minutes. Garnish with desiccated coconut. Serve hot with rice or roti.
