Stir Fried Okra (Indian Style)

This mildly spiced Indian Stir Fried Okra recipe makes a great vegetable dinner dish. It has delicious onion and spice base and if you lucky and cook it right, a little crunchy but yet soft okra texture.

Ingredients:

Serves 4

  • 1 lb/450 g okra
  • 1 onion
  • 1 tsp chopped ginger
  • 1 tsp chopped garlic
  • 1 tsp cumin
  • ¼ tsp turmeric
  • ½ tsp coriander powder
  • ½ tsp salt
  • 2 green chilies, finely chopped
  • 3 tbsp vegetable oil

How to make Stir Fried Okra:

  1. Rinse the okra and drain thoroughly. Chop and discard the ends. Dry it carefully.
  2. Cut the okra into small pieces.
  3. Heat the oil in a large, heavy-bottom pan. Add the chopped onion. Stir fry for 2 minutes.
  4. Add chopped garlic, ginger and chilies, cumin, coriander and salt, and mix together. Stir-fry for 5-7 minutes.
  5. Finally add the okra, mixing with a spoon. Stir-fry the okra over medium heat for 10 minutes. Adjust salt.
  6. Then transfer to serving plates. Serve hot.
