Easy to preapare, hard to forget.

Indian flavored soups are a welcome change to the Western cousines. The delicate use of spices like cumin, chili in combination with fresh herbs, lentils and vegetables imparts special aromas and make a delicious and substantial lunchtime snack, perhaps served with Indian bread such as Naan, or as an imaginative start to a dinner party. They range from quite spicy soups to ones that are milder and more subtle in flavor. These soups are easy to prepare and most can be made ahead of time, then reheated until hot just before serving.
