Lima Beans Curry

Lima beans curry is a simple and easy easy to make, full of protein and fiber dish. Both, fresh and frozen lima beans can be used.

Ingredients:

Serves 2

  • 1 cup frozen lima beans
  • 1 onion finely chopped
  • 1 green chili
  • 2 dry red chilies
  • 1 tbsp ginger, finely chopped
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tomato, chopped
  • 1 tbsp lemon juice
  • 4 green cardamoms
  • salt to taste
  • 2 tbsp oil
  • 1 tsp butter

How to make Lima Beans Curry:

  1. Chop the onions, ginger, green chili and tomato.
  2. Heat the oil in a thick bottomed pan.
  3. Add chopped onion and fry until golden brown. Add green and dry red chilies, ginger, coriander powder, cumin powder and cardamoms. Fry for 3 minutes.
  4. Add lima beans. Stir fry for 3 minutes. Add salt and chopped tomatoes.
  5. Add 1 tbsp lemon juice.
  6. Allow simmering for 5-7 minutes on low - medium heat.
  7. Garnish with fresh coriander leaves.
