Delicious, bright red Tamatar Soup (tomato soup) is one of the most popular Indian Soups.This classic soup is given an Indian twist by adding chilies, cumin and cilantro. Serve with Naan for a refreshing start to a meal.
4-5 medium tomatoes (washed and cut)
2 tsp gram flour (besan)
1 tsp cumin seeds
4-6 green chilies (to taste)
1 garlic clove cut finely
1 tsp grated ginger
½ tsp paprica or red chili if you like very hot
1 tsp jaggery or 1 tsp sugar
1 tbsp vegetable oil
salt to taste
1 tsp tomato paste (optional)
1 tbsp chopped coriander for garnish
2 tbsp heavy cream or half and half
1 tsp butter (optional)
3-4 cups water
How to make Tamatar (Tomato) Soup:
Cut the tomatoes into big pieces. Add 1 cup of water and put to cook. Later you can add some more water.
When cooked, prepare a thick puree by passing through a sieve.
Heat the oil and fry the cumin seeds for a few seconds.
Add green chilies, chopped garlic and ginger and fry again for a few seconds.
Add the tomato purée and salt, black pepper to taste and 2 cups of water. Add butter (optionalI
Cook for a few minutes. Add heavy cream or half and half. SImmer for 1 minute and turn off the gas.
