Bitter Gourd (Karelas) with Onion Stuffing

Stuffed Bitter Gourd with onion filling is a lip smacking combination bitterness and sweetness infused with aromatic spices.

Ingredients:

Serves 4-6

  • 2 lbs Karela
  • 2 onions sliced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 4 dried red chilies
  • ½ tsp chili powder
  • salt to taste
  • 1 tsp turmeric
  • 2 fresh green chilies (opt)
  • 5 tbsp vegetable oil

How to make Bitter Guard (Karelas) with Stuffing:

  1. Scrape the gourds and slit them lengthways from the tip, leaving the 2 halves joined at the stalk.
  2. Sprinkle salt both inside and out and leave the karelas in a cool place for 20 minutes.
  3. Scrape away the seeds and squeeze the karelas to remove the moisture drawn from them by the salt.
  4. Heat the vegetable oil in a thick bottomed pan.
  5. Add chilies, cumin, turmeric powder, coriander and salt, Mix it together. Fry for 3 minutes.
  6. Then transfer the mixture to a liquidizer. Add few drops of lemon juice and blend it together to a smooth paste.
  7. Stuff the karelas with onion mixture and tie them together with a thread. Leave to stand for 10 minutes. In a meantime heat the oil in a pan.
  8. When hot add the karelas and fry over a low heat, turning it gently for 5-10 minutes, until done. Vegetable should be soft and golden brown in color.
  9. Transfer the vegetables to serving plates. Serve with roti or paratha.
