Biryani Masala

You'll LOVE this fragrant, homemade Biryani Masala (Cooking Spice Blend with warm notes) to make the most authentic biryani you can imagine. Suitable fo all Indian Rice Dishes, lamb, chicken or vegetarian.

Ingredients:

  • 3 black cardamoms
  • 12 green cardamoms
  • 2 tsp fennel seeds
  • 3 bay leaves
  • 2 star anise
  • 1 tsp peppercorns
  • 1 tbsp cloves
  • 4 tbsp coriander seeds
  • 2 tbsp cumin seeds
  • ½ nutmeg
  • 4 cinammon sticks (about 2 inches long)
  • 1 mace

How to make Biryani Masala:

  • Preheat a small skillet over medium-high heat.
  • Add the spices and toast shaking the skillet every few seconds for about 1 minute, until fragrant.
  • Remove from the heat and let the mixture cool down.
  • Next grind the rosted spices to a fine powder.
  • To get smoother biryani masala sieve the powder mix.
  • Store in an airtight glass container.
