Aloo Gobi (Dry Cauliflower with Potatoes)

This dry cauliflower and potatoes dish is a dry version of popular curry of the same name. It is easy to make and it tastes great with roti or paratha.

Ingredients:

Serves 2 - 4

  • 1½ cauliflower florets,
  • 2 medium potatoes
  • 2 tsp cumin seeds
  • 1 tsp coriander powder
  • ¼ tsp asafoetida
  • ¼ tsp garam masala
  • 2 tbsp garlic-ginger paste
  • 1 tsp chili powder
  • salt to taste
  • ¼ tsp turmeric
  • 2 fresh green chilies (optional)
  • 3-4 tbsp vegetable oil
  • 2 tbsp chopped cilantro to garnish
  • few tbsp of water if needed

How to make Dry Cauliflower with Potatoes (Aloo Gobi):

  1. Heat the oil in a large, heavy pot.
  2. Add cumin seeds and. Fry it for about 30 seconds.
  3. Add asafoetida, garlic-ginger paste, green chilies (optional) and saute until fragrant, about 3 minutes.
  4. Add chopped potatoes, cover and cook on medium heat for few minutes.
  5. Add the cauliflower. Then add turmeric and coriander powder. Season with salt and pepper (optional) and sauté for 3 more minutes.
  6. Add turmeric powder, chili powder and garam masala. Mix it well. You can add some water when vegetables start sticking to the pan. Then cover it with a lid and cook for 6 minutes stiring ocasionally til vegetables are soft. Garnish with fresh cilantro and serve with any Indian bread of your choice.
