Vegetable Jalfrezi

Vegetable Jalfrezi is a stir fry style Indian curry made with medley of vegetables such as peppers, onions, cauliflower, carrots, peas in a thick curry sauce. It pairs well with Indian flat breads like Naan, roti, chapati and rice.

Ingredients:

Serves 4

  • 1 cup cauliflower florets
  • ½ cup carrot
  • 1 cup beans
  • ½ cup sweet
  • 1 bell pepper
  • 1 small / medium onion sliced
  • 1 green chilli
  • 1 tbsp ginger julienned
  • 2 tomatoes pureed
  • 1 tbsp cream or half and half (optional)
  • 1 tbsp ginger-garlic paste
  • ½ tsp Kashmiri chilli powder
  • 1 tsp lemon juice
  • ¼ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp garam masala powder
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 tbsp coriander leaves (chopped)
  • salt to taste
  • 3 tbsp oil

How to make Vegetable Jalfrezi:

  1. Wash, clean and cut vegetables. Then blanch them in a hot water for few minutes. Drain and set aside.
  2. Heat oil in a big frying pan. Add cumin seeds, bay leaf and slited longwise green chilli. Stir for 30 seconds.
  3. Next add the ginger-garlic paste and saute for a minute on low heat.
  4. Add onions and saute until translucent.
  5. Add cut bell pepper and corn and saute for 2 minutes.
  6. Peal then puree the tomatoes. Add to the pan and saute till the mixture starts separating from the oil.
  7. Now add turmeric powder, chilli powder, coriander powder, garam masala, salt and saute for few minut4es..
  8. Nest add all the vegetables and cook for about 3 minutes till all ingredients will be well mixed and blended with spices.
  9. Add cream and mix (optional).
  10. Add lemon juice, cover and cook till the vegetables are soft but do not overcooked.
  11. Garnish with ginger juliennes and coriander leaves.
  12. Serve with rice or roti.
