Potatoes with Peas (Aloo Matar)

This simple Peas and Potato Curry dish is a great option for a quick but delicious, vegetarian dinner.

Ingredients:

Serves 2-4

  • 3 medium potatoes
  • 1 cup peas (fresh or frozen)
  • 1 onion, finely chopped
  • 1 tsp cumin seeds
  • 2 tbsp ginger-garlic paste
  • turmeric powder
  • coriander powder
  • chili powder
  • 3 medium tomatoes, pured
  • 3-4 curry leaves
  • 2 tbsp oil
  • salt to taste

How to make Potatoes with Peas (Aloo Matar):

  1. Peal, wash potatoes and cut in bite size pieces.
  2. Heat the oil in a non-sticking pan. Add cumin seeds, curry leaves. Let it sizzle for 20 seconds.
  3. Add chopped onions and sauté for 6-7 minutes or till onions are light brown.
  4. Add the garlic-ginger paste, turmeric powder, coriander powder and red chili powder. Mix well and cook for 2 minutes stiring ocasionally.
  5. Add the potatoes and cook for 5 minutes on medium heat.
  6. Add tomato pure, salt and 1 cup of water. Cook for 3-4 minutes.
  7. Finaly, add the peas, cook for 5 minutes or until peas and potatoes are ho. Serve hot.
