Green Beans Toran

Green Beans Toran beautifully balance the different tastes of any dish. This green beans dish “thoran” (stir-fry), is made with green beans, a few spices, grated coconut, and curry leaves.

Ingredients:

Serves 2

  • 8oz (225g) green beans, trimmed and cut 1 inch (2.5 cm) lengths
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 2 red chilies
  • 4 curry leaves
  • 1 small onion (finely chopped)
  • salt to taste
  • 2 tbsp grated coconut
  • 1-2 tbs water

How to make Green Beans Toran:

  1. Heat the oil in a thick bottomed pan and when hot add mustard seeds.
  2. Sizzle for a few seconds until the seeds have popped.
  3. Add the red chili, curry leaves and onion and fry gently, stirring, until onion is golden.
  4. Turn the heat to low and add the beans, 1 -2 tbsp water, salt and the coconut.
  5. Cook with the lid firmly on, for about 10 min, until the beans are tender but not soft, stirring occasionally.
  6. Adjust salt and let the pot stand for 5 min before serving.
