Vegetable Pulao

Vegetable Pulao is delicioous rice dish prepared by cooking rice with various vegetables and spices.In this recipe, vegetables seasoned with spices are first sauteed in oil and then cooked with rice in the water.

Ingredients:

Serves 4

  • 1 cup basmati rice, washed and soaked in water for about 20 minutes.
  • 1 medium onions finely chopped 1 cup vegetables (carrot, beans, cauliflower, broccoli green peas etc)
  • 2 tbsp fresh ginger, thinly sliced
  • 4 garlic cloves, finely chopped
  • 1-2 green chilies, chopped
  • 1 cinnamon stick
  • 4-6 green cardamoms
  • 5 cloves
  • 1 bay leaf
  • 2 black cardamoms
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • 1 tsp garam masala
  • 4 peppercorns
  • 2 cups water
  • salt to taste
  • leaves from 2 spring coriander (to decorate)
  • ¼ cup cashew nuts (to decorate optional)
  • 4 tbsp vegetable oil

How to make Vegetable Pulao:

  1. Rinse the rice and soak in the water for 20 minutes.
  2. Heat the oil in a pot.
  3. Put in chopped onions. Fry till the onions turn transparent.
  4. Add garlic and ginger.
  5. Add black and green cardamoms, cinnamon stick, pepper corns, cloves and bay leaf.
  6. Add coriander and cumin powder, garam masala, salt to taste (1 tsp or more) and stir-fry for 3 minutes.
  7. Add green chili the vegetables of your choice.
  8. Stir fry for 2-3 minutes.
  9. Add soaked basmati rice and 2 cups of water. Cover the pan and let simmer over medium/low heat for 8 minutes, or until all water has evaporated.
  10. Transfer the rice to serving dish. Garnish with cashew nuts and coriander leaves. Don't forget about serving raita with it.
