Tomato Rice (Tamatar Chawal)

The tomato rice is a simple, flavorful one pot rice dish made of rice, tomatoes and Indian spices.

Ingredients:

Serves 4

  • 10-12 oz (300-350g) cooked basmati rice
  • 2 tbsp split gram, soaked in water for 20 min
  • 6 curry leaves
  • 2 dried chilies
  • 1 medium onion, chopped
  • 2 tbsp ginger, finely grated
  • 2 - 3 garlic cloves, slices
  • 1 green chili chopped
  • 2 medium tomatoes, peeled and chopped
  • pinch of sugar
  • 1 tsp butter
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • turmeric pinch
  • 2 tbsp fresh cilantro, chopped
  • salt to taste
  • 2 tbsp oil
  • 2 cups water

How to make Tomato Rice:

  1. Heat the oil in a heavy bottom pan.
  2. Add the mustards seeds, split gram, curry leaves and red chili and fry over low heat, stirring constantly for 1-2 minutes or until mustard seeds have popped and the gram is golden brown.
  3. Add the onion, garlic ginger and green chili and fry for 3-5 minutes, stiring.
  4. Add thge tomato and pinch sugar and cook mashing tomato under the back of a wooden spoon to make a thick paste.
  5. Stir in the boiled rice and butter and heat through stiring for about 4 minuters. Add the salt to taste.
  6. Remove the pan and serve with your favorite curry.
