Sweet Vermicelli (Meethi Seviyan)

Vermicelli is a sweet dessert made from seviyan (whole wheat vermicelli), ghee, milk, dry fruits, nuts and sugar.

Ingredients:

Serves 2-4

  • 2 tbsp butter (can be also dry roasted)
  • 200 gm (1½ cup) vermicelli
  • 1½ cup hot water (milk can be used)
  • 1/4 teaspoon saffron; soaked in hot water
  • ½ cup sugar
  • 2 tbsp golden raisins
  • ¼ cup sliced almonds
  • ¼ cup sliced pistachios
  • ¼ tsp ground cardamom
  • few pomegranate seeds or fruits to decorate
  • Preparation time: 5 min
  • Cooking time: 20 min

How to make Sweet Vermicelli:

  1. Keep all the ingredients ready. Chop nuts, Soak the raisins. Break the seviyan (vermicelli) into small pieces less than 2.5cm (1 inch) in length and keep aside.
  2. Heat non-stick pan. Add the verimcelli and fry the vermicelli until golden brown, stirring so it colours evenly.
  3. Add hot water and saffron and bring to the boil.
  4. Add nuts then turn heat low, cover and simmer gently until vermicelli is cooked, about 15 minutes.
  5. Add sugar and sultanas and cook uncovered until liquid is absorbed.
  6. Stir well, decorate with nuts and some fresh fruits and serve warm best with kulfi.
