Gajar Halwa (Carrot Halwa/Pudding)

Gajar Halwa (Gajar ka Halwa) / carrot pudding is one of the most popular Indian desserts in Northern India. It is made by simmering fresh gradted carots with milk, sugar and ghee and garnished with chopped nuts.

Ingredients:

Serves 4-6

  • 3 lb/1.5kg carrots
  • 5½ oz/150 g butter
  • 2½ cups milk
  • ¾ cup evaporated milk
  • ½ cup tbsp sugar
  • 10 cardamoms
  • raisins, cashews, pistachios to decorate

How to make Gajar Halwa:

  1. Rinse, peel and grate carrots.
  2. Melt a butter in a pan.
  3. Add the grated carrots and cook on medium heat stirring for 15-20 minutes.
  4. Add the milk, evaporated milk, crushed cardamoms and sugar to the mixture and continue to cook, stirring constantly for an additional 20-30 minutes.
  5. Transfer the carrot mixture into serving dishes. Decorate with the chopped pistachios, raisins and cashews. Serve immediately.

Tip: Traditional method does not use condensed milk or powder but using it wil make the whole process faster and resulting in much tastier halwa.
