Ginger Tea with Mint Leaves

This refreshing, anti-inflmmatory, immune-boosting Ginger & Mint Tea is made with fresh ginger, mint leaves and addition of some lemon juice and honey. It is not only healthy but also so deliciously comforting.

Ingredients:

Serves 2

  • 3 cups water
  • 2 inch piece of ginger
  • 4-5 springs of mint
  • sugar, honey (optional)
  • juice from 1 lemon to serve
  • sugar, honey to serve (optional)

How to Make Ginger Tea with Mint:

  1. Peel the ginger and slice into thin strips.
  2. Bring 3 cups of water to the boil in a saucepan and add the grated ginger. Leave to simmer gently for 7-8 minutes on a low heat.
  3. Add the mint leaves and let it steep for 1 minute. 1.Remove from the heat and leave to stand for 5 minutes. Pour the ginger tea through a sieve to a serving cups.
  4. Squeeze the lemon. Add the lemon juice to taste.
  5. Decorate with spring of mint and slice of lemon. Sweeten with honey or sugar if/ as desired.
