Mango & Coconut Smoothie

This Vegan (no diary here) Mango Coconut tropical smoothie is incredibly delicious, smooth and creamy. Perfect for a summer treat. High in fiber and made from just few imple ingredients: low-fat milk, mangos, sugar and live active cultures.

Ingredients:

Serves 2

  • 1 large mango
  • 1 cup coconut milk
  • 1 tsp sugar
  • 4-6 ice cubes
  • very small piece of ginger, grated (optional)
  • pinch of cinnamon powder and pinch to decorate

How to make Mango & Coconut Smoothie:

  1. Peel the mango and cut, remove the pit.
  2. Place the chopped flesh of mango, pinch of cinnamon and grated ginger (optional) in the food processor or blender with the sugar. Add coconut milk. Process until completely smooth.
  3. Add the ice cubes and process until frothy.
  4. Pour into tall glasses and sprinkle with cinnamon powder.

Tip:

To add a special kick to this drink, add some white rum while processing in a blender.
