Cucumber Raita

Cucumber Raita is a classic Indian creamy, yet refreshing yogurt dip, with a little hint of cooling spices, that goes perfect with curry and naan bread or paratha to dip in to it.

Ingredients:

Serves 1-2

  • 1 cup plain yogurt
  • ½ cucumber, grated or sliced
  • 1 green or red chili, seeded and very finely chopped (opt)
  • black pepper, salt to taste
  • 1-2 springs of coriander leaves,
  • ¼ tomato chopped to garnish
  • ¼ tsp cumin powder (to sprinkle)

How to make Cucumber Raita:

  1. In a bowl beat the yogurt.
  2. Add the other ingredients mix well and chill.
  3. Garnish the raita with a coriander leaves and chopped finelly tomato.
  4. Sprinkle with cumin powder. (preferably rosted)
  5. Serve as a side dish with roti and as accompaniment to a main dish such as a biryani.
