Sweet Tomato Chutney

Sweet Tomato Chutney is a naturally delicious Indian dip or condiment with a rich, infused with few Indian Spices flavor that complement tomatoes beautifully.

Ingredients:

  • 1 Ib/500g tomatoes
  • salt to taste
  • ½ tsp ground cardamom seeds
  • 3 cloves
  • 5 tbsp sugar
  • 1 tsp chili powder
  • 1 tsp mustard seeds
  • 1 tbsp oil
  • 1 tbsp white wine vinegar

How to make Sweet Tomato Chutney:

  1. Immerse the tomatoes in a bowl of boiling water for about 2 minutes, until the skins split, drain them, allow to cool, peel and chop.
  2. Bring half cup of water to the boil in a small pan, add the sugar and tomatoes and cook for 5 minutes, stirring.
  3. Add the cardamom, cloves and chili powder and continue cooking, mashing the tomato under the back of a wooden spoon to make a thick paste. Remove the pan from the heat.
  4. Heat the oil, add the mustard seeds and fry until they have all popped, then add to the tomatoes.
  5. Stir in the vinegar, add salt to taste and let it cool. Keep in the glass jar in the fridge.
