SWEET LASSI        (serves 4)

 

2 ½ cups plain yogurt

1 cup cold water

4-5 tbsp sugar (to taste)

finely chopped pistachios to decorate, crushed ice to serve

 

 

 

 

  • Pour yogurt, water, sugar and ice into a blender.

  • Blend on a high setting for 1 minute.

  • Pour the lassi into tall glasses.

  • Sprinkle with chopped pistachios to decorate and serve immediately.

MANGO LASSI       (serves 4)

 

2 fresh mangoes

4 cups plain yogurt

1 cup cold water

8-10 tsp sugar (to taste)

crushed ice to serve

 

 

 

 

 

  • Place the peeled, seeded and chopped mango in a blender.

  • Add the yogurt, water, sugar.

  • Blend it until smooth and frothy.

  • To serve fill glasses with crushed ice, pour in the lassi.

WATER MELON DRINK (serves 2)

                   

1/4  small water melon

1/2 tsp minced fresh mint

1 tsp lemon juice

1/2 cup ice cubes

 

 

  • Process all the ingredients in a blender until smooth and frothy.
  • To serve, fill glasses with crushed ice, pour in the drink.

 

 

PAPAYA DRINK

 


1 ripe papaya, skin, seed, cut into chunks

2 tsp  lime juice
2 tbsp sugar

3 drops of coconut essence (or coconut rum)
5-6 ice cubes

  • Blend  lime juice, papaya, coconut essence and sugar in a blender.
  • Add ice and continue to blend until smooth.
  • Serve garnished with orange peel, lemon ring.

 

SANTRA PUDINA ka SHARBAT     

(Orange juice flavoured with mint)

                    (serves 4)

 

2 cups orange juice,  fresh

2 tsp mint leaves, fresh, washed, chopped

1 tsp lemon juice

1/2 cup sugar

1/2 cup water

1 tsp orange peel, shredded

 

 

  • Boil the sugar and water together to make sugar syrup.

  • Add the orange juice, mint leaves, lemon juice and orange peel. Cover and let it stand at room temperature for at least one hour. Strain. Cover and chill.

  • Serve garnished with orange peel and mint springs and topped with crushed ice.

 

POMEGRANATE AND GRAPE BLISS

                           (serves 2)

 

1 cup pomegranate juice

1/2 cup red grapes

1/2 cup ice cubes

1/2 banana

2 tsp sugar

 

 

  • Process all the ingredients in a blender until smooth and frothy.
 

PINEAPPLE GINGER DRINK

                    (makes 1cup)

3/4  in (2cm) fresh ginger root, peeled and sliced

1/2 fresh medium pineapple (sliced)

1/2 tsp minced fresh mint

 

 

  • In a juice extractor, process the ginger and pineapple until smooth, then stir in the mint.

  • Boil the sugar and water together to make sugar syrup.

 

 

CITRUS COLD (FLIGHTS THE FLU)

makes 1cup

 

1 clove garlic

slice of red onion

1/2 lemon, peeled and sliced

1 orange , peeled and sliced

1/2 tsp honey or to taste

                

 

  • In a juice extractor, process the garlic, onion, lemon and orange until smooth, then stir in the mint.

  • Add the honey and whisk until well combined.

 

Onion and garlic are good expectorants and help to break up congestion and garlic is natural antibiotic. The orange provide vitamin C to help boost the immune system.

 

ORANGE PEPPER TURMERIC DETOXIFIER

 

1 orange, peeled, deseeded and sliced

1/2 red bell pepper, deseeded and sliced

1 in fresh turmeric, peeled and sliced

2 tsp psyllium husk

 

 

  • In a juice extractor, process the orange, bell pepper and turmeric  until smooth. Add the psyllium and drink immediately.

This drink helps to detoxify any accumulation of chemical toxins which cause stress ton the body. Turmeric has liver-protective qualities and psyllum absorbs and helps to eliminate toxins, while the orange juice and pepper provide vitamin C and carotenes.

 

 

GREEN JUICE  (makes about 1 cup)

 

5 small spinach leaves

1 medium green bell pepper, deseeded and sliced

1 stalk celery with leaves, sliced

2 large lettuce leaves

 

  • In a juice extractor, process the spinach leaves, then the bell pepper, celery and lettuce until well combined.

 

This drink is rich in chlorophyll, and excellent body cleanser and contains nutrients such as foliate, carotene and potassium

 

 

MANGO PEACH GINGER FRAPPE  (makes about 2 cups)

 

1/2 in fresh ginger root, peeled and sliced

1 large mango, peeled and pitted

2 peaches, peeled and pitted

8 -10 ice cubes

 

  • Process all the ingredients in a blender until smooth.

 

 

 

 

SMOOTHIE SOOTHER  (makes about 2 cups)

 

1/2 in fresh ginger root, peeled and sliced

1 cup fresh pineapple juice

1/2 papaya, peeled, deseeded and sliced

1 cup plain yogurt

 

 

 
  • Process all the ingredients in a blender until smooth and frothy.

 
 

SPICED PISTACHIO SMOOTHIE  (makes about 2 cups)

 

1/4 cup unsalted, shelled pistachios

1 cup milk

1/2 vanilla yogurt

pinch of ground cardamom

pinch of ground cinnamon

1 tsp sugar

few drops rose water, or to taste

6 ice cubes

1/2 in fresh ginger root, peeled and sliced

1 large mango, peeled and pitted

2 peaches, peeled and pitted

8 -10 ice cubes

 
  • Process all the ingredients in a blender until smooth and frothy.
 

BANANA BUTTERMILK SMOOTHIE

 (makes about 2 cups)

 

1/2 cup buttermilk

1 cup milk

1 large banana, sliced

1 tbsp honey

pinch of ground nutmeg or cinnamon

 

 
  • Process all the ingredients in a blender until smooth and frothy.
 

BANANA PINEAPPLE COCONUT WHIP

 (makes about 2 cups)

 

1/4  fresh pineapple, peeled, cored and sliced

1 large banana, sliced

2  tbsp unsweetened shredded dried coconut

8 ice cubes

  • Process all the ingredients in a blender until smooth and frothy.
 

EXPRESSO FREEZE

 (makes 1 cup)

 

1 cup strong black coffee

2 tablespoons condensed milk

pinch of ground cinnamon

few drops vanilla extract

 

 

2  tbsp unsweetened shredded dried coconut

8 ice cubes

  • Let the coffee cool, then pour into ice cube trays and freeze until solid in the freezer.
  • Place the frozen coffee cubes in a blender and pulse in short burst until grainy. Add all the other ingredients and process until well combined. Spoon into small chilled glasses and serve immediately.
 

CREAMY MANDARIN SHAKE

 (makes 2 cups)

 

 

3 mandarin oranges

1 cup vanilla ice cream

1 cup milk

pinch of ground star anise

pinch of cardamom

pinch of ground cinnamon

few drops rose water

 

  • Peeled, deseeded and slice the mandarin oranges.
  • Then process all the ingredients in a blender until smooth and frothy.
