Indian Sharbats
Sharbat is popular Middle Eastern
and South Asian, sweet chilled drink, that is prepared from fruits or flower
petals. Sharbats were introduced by the invading Turks and
Persians and were originally consumed in large quantities because they
replaced the large loss of body water which occurs in India's tropical
climate. For this reason, sherbets are still offered as refreshment in
India, sometimes with the addition of alcohol. Traditional sharbats are made
of one or more of the following: lemon, orange, rose, pineapple, almonds,
papaya, water melon

SANTRA
PUDINA ka SHARBAT (Orange juice flavored
with mint)
(serves 4)
2 cups orange juice,
fresh
2 tsp mint leaves, fresh,
washed, chopped
1 tsp lemon juice
½ cup water
1 tsp orange peel, shredded
sugar according to taste

Boil
the sugar and water together to make sugar syrup.

Add the orange
juice, mint leaves, lemon juice and orange peel. Cover and let
it stand at room temperature for at least one hour. Strain.
Cover and chill.

Serve garnished with
orange peel and mint springs and topped with crushed ice.

PAPAYA DRINK
(serves 4)
1 ripe papaya, skin, seed, cut into chunks
2 tsp lime juice
2 tbsp sugar
3 drops of coconut essence (or coconut rum)
5-6 ice cubes |

Blend lime juice, papaya, coconut
essence and sugar in a blender.

Add ice and continue to blend until
smooth.

Serve garnished with
orange peel, lemon ring.

CANTALOUPE SHARBAT
(serves 4)
1 cantaloupe, chopped
½ cup
of orange juice
3/4 in (2cm) fresh ginger root, peeled and
sliced
2 tbsp lemon juice
pinch of cinnamon
4 - 6 ice cubes

Cantaloupe has
refreshingly rich flavor and aroma and minimal number of calories.
- Blend all the ingredients in a blender
until smooth.
- Serve in chilled glasses.

1 cantaloupe, diced
1 cup strawberry
½ cup milk
3-4 tsp sugar
ice, cream optional

- Blend all the ingredients in a blender
until smooth.

1/4 small water melon
½ tsp minced fresh mint
1 tsp lemon juice
½ cup ice cubes

1 large mango, peeled and pitted
2 peaches, peeled and pitted

(serves 2)
1 cup
pomegranate juice
½ cup red grapes
½ cup ice cubes
1 banana
2 tsp sugar

- Process all the ingredients in a blender
until smooth and frothy.
